Cherry cupcakes

I love cupcakes and muffins and bake them as often as I can. Luckily they are super easy and don't take a lot of time.

These cupcakes I found on Foodfanatic which is a Danish site so I have translated the recipe.
They taste amazing. But they are a little small for my taste so next time I will double the ingredients.

The recipe is for ten muffins.

Ingredients
  • 85 g soft butter
  • 85 g sugar
  • 1 big egg
  • 85 g flour 
  • 25 ground almonds
  • 1 tsp baking powder
  • 3 tbsp milk
  • 175 g cherries + some for decorating
Butter icing
  • 80 g butter
  • 170 g icing sugar
Reheat oven to 180° C.
In a large bowl stir butter and sugar until mixed. Beat in the egg until blended.
Mix flour,  chopped almonds and baking powder. Add flour mixture and milk to sugar and butter. Remove the stones from the cherries, chop them and gently fold in cherries.
Spoon batter into prepared cups (cups will be almost full).
Bake cupcakes 20 to 25 minutes or until toothpick inserted in centers comes out clean. Let cupcakes cool in pans 10 minutes. Remove from pans to wire rack; cool completely.

Make the butter icing as they cool. Stir the butter with mixer at high speed. Bolt icing sugar until mixed.
